Born in 2010 from the vision of Michele Rossetti, the Rossetti & Scrivani project is dedicated exclusively to the production of Classic Method sparkling wines from 100% Pinot Noir grapes. This commitment, heir to La Costaiola's tradition of research, translates into wines that combine technical rigor, respect for the terroir, and uncompromising quality. Each bottle, with its exclusive packaging , reflects the high-end positioning of a product synonymous with elegance and style.

The heart of the territory

Oltrepò Pavese is one of the world's most renowned wine regions for the production of high-quality sparkling wines, with a history stretching back to ancient times. With over 3,000 hectares dedicated to Pinot Noir, it is the Italian capital of this noble grape variety. Rossetti & Scrivani selects the region's finest locations to maximize the value of Pinot Noir, elevating it to the pinnacle of its sparkling wine production.

From the vineyard to the bottle: an art that requires time

The quality of our sparkling wines begins in the vineyard, where the Pinot Noir grapes are hand-picked and transported to the cellar in crates to preserve their integrity. Soft, delicate, and gradual pressing extracts only the best: the musts from the first pressing, the cuvée , ferment in steel tanks. After fermentation, the base wines undergo bâtonnage to add structure and aromatic complexity.

Only the finest batches are selected for the final blend. The bottles then rest in our temperature-controlled cellars for 24 to 60 months of aging on the lees . This lengthy maturation gives our sparkling wines their unmistakable elegance and distinctive style. Every step, from riddling to disgorging, is carried out with care to offer you a Metodo Classico that is the perfect expression of artisanal craftsmanship and a passion for excellence.
